Cooking Matters Fall Festivities

A Fall Full of Festivities!

This past autumn and into the holiday season, Cooking Matters participants enjoyed a variety of back-to-school and holiday festivities! Families enjoyed making different flavored trail mixes at The Boys and Girls Club Health Fair in Pueblo. Solid Rock’s Free Farmers Market hosted a trunk-or-treat as part of their harvest festival. It was a joy to see all the costumes and give out cute mandarin orange jack-o-lanterns and cheese stick ghosts to the children.

Healthy Thanksgiving makeovers at Atlas Prep and Falcon CLDE were a hit and included recipes such as whole grain stuffing with fresh herbs, savory acorn squash, and of course Cooking Matters delicious fall fruit compote.

For the December holidays, Sunny Side Market hosted a healthy tamale making workshop in which we experimented using oil instead of lard in the masa. We also worked with RMSER and Pueblo Food Project to host a workshop making lasagnas packed with veggies. The new Cooking Matters at Home curriculum has provided us with flexibility to host these one-off classes and workshops, which have been great in helping build community and making this holiday season bright!
